So chances are the screws would pull out of the wood.

One approach is to just get some shims and stack them up.
On the top side of the floor another fix it idea to lay down new hardwood over the existing floor.

However your bad back might be aggravated by your uneven bed but it is almost certainly created by you spending too much time sat down.

Bed wood is pretty crappy and a bed itself is made to be supported.
If this is my best bet then what are recommended materials to use.
